Try this easy and delicious Quinoa recipe. Quinoa is considered a superfood, with a very high protein content, though not as high as beans and legumes. Not only a good source of dietary fiber, it is high in magnesium and iron, and a great source of calcium.

RECIPE

Quinoa with Kale & Sundried Tomatoes

 Ingredients

1 cup Organic Quinoa – White, Red or a combination

2 T olive oil

1/2 Onion or shallot, diced

1-2 cloves of garlic

4 leaves of kale, stem removed and chopped finely

1/4 cup water

10-12 sundried tomatoes, julienne

3 slices of jalapeno,  seeded

½ lemon plus 3 slices for garnish

Kosher salt

Directions

In a medium pan, cook quinoa in 1 cup of water on medium heat for 15-20 minutes, until tender. Set aside to cool.

In a sauté pan, drizzle 2 tablespoons of olive oil and sauté onions and garlic and kale until soft. Add a small amount of water (about 4-5T) as needed to steam the kale. Add julienne sundried tomatoes and jalapeno.

Add seasoning to taste and finish with a squeeze of fresh lemon juice.

Combine with quinoa. Garnish with 3 slices of lemon.
