Peach Cocktail
In a juicer, combine peaches, lemon and apples.
Can be served as a Peach Mimosa with a splash of Prosecco.
Blueberry Blintz Souffle
Ingredients
12 Blueberry Blintzes (purchase frozen from the market)
6 eggs
1 cup sour cream
1/4 cup sugar
1 t vanilla
2 T orange juice
dash cinnamon & nutmeg
1/2 stick of butter
Fresh blueberries for garnish
Directions
Melt butter and pour into pyrex pan 11 x 8. Place blintzes in the bottom of the pan. Put remaining ingredients – except spices – into a blender and pour over the blintzes. Sprinkle nutmeg and cinnamon on top.
Bake 350 degrees for 1 hour. Serve and garnish each plate with fresh blueberries.
Hearts of Strawberries
Cutting strawberries in half, naturally displays a heart shape.
Add a dollup of fresh whipped cream for a healthy Spring touch.
One small orchid on the plate will add elegance that will definitely surprise.
